Keto Chocolate Mayo Cake

Keto Chocolate Mayo Cake is a moist and delicious homemade chocolate cake perfect for a celebration either with or without cream cheese icing! Keto Chocolate Mayo Cake is perfect for people with multiple allergies; it is gluten-free, dairy-free, nut-free, and can easily be made vegan!

INGREDIENTS:

  • 1/3 Cup Coconut Flour
  • 1/3 Cup Cocoa Powder
  • 1 Tsp Baking Powder
  • Pinch Sea Salt
  • 3 Large Eggs
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Mayonnaise Homemade will be best, but any zero carb Mayo you choose will work
  • 2/3 Cup Water
  • 1 Cup Erythritol

INSTRUCTIONS:

  1. Preheat oven to 350 degrees. Grease a 9×9 pan well. OR if preferred use baking spray, something like Bakers Joy or similar.
  2. Combine coconut flour, cocoa powder, baking powder and salt, mix well and set aside.
  3. With a mixer, cream eggs and sweetener and vanilla until light and fluffy. Usually this takes 3-5 minutes. Then beat in Mayo and Vanilla Extract.
  4. Into the creamed mixture alternate dry ingredient mixture and water mixing until well incorporated.
  5. Pour into greased 9×9 pan or into 8-10 cupcake liners in cupcake tins. Bake 20-25 minutes or until toothpick inserted comes out clean.
