- 1/3 Cup Coconut Flour
- 1/3 Cup Cocoa Powder
- 1 Tsp Baking Powder
- Pinch Sea Salt
- 3 Large Eggs
- 1 Tsp Vanilla Extract
- 1/2 Cup Mayonnaise Homemade will be best, but any zero carb Mayo you choose will work
- 2/3 Cup Water
- 1 Cup Erythritol
INSTRUCTIONS:
- Preheat oven to 350 degrees. Grease a 9×9 pan well. OR if preferred use baking spray, something like Bakers Joy or similar.
- Combine coconut flour, cocoa powder, baking powder and salt, mix well and set aside.
- With a mixer, cream eggs and sweetener and vanilla until light and fluffy. Usually this takes 3-5 minutes. Then beat in Mayo and Vanilla Extract.
- Into the creamed mixture alternate dry ingredient mixture and water mixing until well incorporated.
- Pour into greased 9×9 pan or into 8-10 cupcake liners in cupcake tins. Bake 20-25 minutes or until toothpick inserted comes out clean.
