- 2/3 cup canola oil
- 1/2 cup brown sugar
- 1/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs
- 2 cups flour
- 1/4 cup dark cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 1 cup finely shredded zucchini
- 1 cup mini chocolate chips, divided
For the Filling
- 1 - 8 ounce package cream cheese, softened
- 1/4 cup sugar
- 1 teaspoon vanilla
- 1 Tablespoon flour
INSTRUCTIONS
- Preheat the oven to 400 degrees. Spray 18 muffin tin cavities with non stick spray.
- Beat the oil, sugars, vanilla, and eggs.
- Stir together the dry ingredients. Slowly add this mixture alternately with the buttermilk to the wet ingredients. Mix until everything is incorporated.
